| Olive Oil | 2 tablespoon |
| Sweet Onion | 1 cup, chopped |
| Carrots | 2 cups, chopped |
| Garlic | 2 cloves, minced |
| Italian Seasoning | 2 tablespoons |
| Tomato Paste | 1/4 cup |
| Salt | 2 teaspoons |
| Black Pepper | 1/2 teaspoon |
| Water | 2 cups |
| Basalmic Vinegar | 1 tablespoon |
1. In a large pan, heat olive oil and sauté the onions and carrots until soft and onions are golden, about 10 minutes.
2. Add the garlic and Italian seasoning and cook a minute. Add the tomato paste and cook stirring until the paste is caramelized, about 5 minutes.
3. Add the tomato pureé, cooked lentils and season with salt and black pepper. Cover and simmer for 1 hours until lentils are tender.
4. Serve over pasta or rice.
